With summer in Chennai never leaving us and a slew of festivals coming up cooking sweets and savouries can be quite a nightmare. If you want to cook in the comfort of a fan/air-conditioner without sweating and with your saris and salwars intact – Come, read this simple microwave way.
In fact I tried this recipe myself and found it much easier than standing next to the stove and cooking over a fire.
There was never a case of over cooking or burnt food, as the oven was beeping after the timer was off. So if you have to take a quick call and forgot to get back to the kitchen on time, the food would never be spoilt as the oven is patiently waiting for you to come and switch it on.
Ingredients:
Rava/Sooji – 1 Cup (100 ml)
Sugar – 1 Cup (100 ml)
Cashews – 5/6
Raisins – 5/6
Ghee – 3 tablespoons
Cardomom Powder – ½ teaspoon
Colouring agent – ¼ teaspoon
Measure:
1:1:2/2.5
Rava: Sugar: Water
Step 0: Assemble the ingredients ready for making Rava Kesari
Step 1: Add 2 teaspoons of ghee to a microwave safe container and set it for 30 seconds in the oven
Step 2: Remove the container with the melted ghee from the microwave and add rava/sooji. Mix the rava/sooji and ghee well and microwave it again for 1 minute.
Step 3: Remove from microwave and you will find the rava/sooji evenly and mildly roasted with a nice aroma emanating. To this add 2 cups of boiling water.
Step 4: Put it back in the oven for 2 minutes, and check after 1 minute to mix it well
Step 5: After 2 minutes, remove the rava/sooji from the microwave and you will find the same well cooked. To this add 1 cup sugar and colouring agent. Put it back in the oven for about 2 minutes just so that the sugar, rava/sooji and coluring agent all come together.
Step 6: Put it back in the oven for 2 minutes, and check after 1 minute to mix it well
Step 7: Separately in a thick bottom small container, melt 2 teaspoons of ghee and roast cashewnuts and raisins. Once roasted, add it to the cooked rava/sooji. And your Rava Kesari is ready!
